Is it possible to use the TI C2000 ADC in a differential ADC configuration? I am currently using two single ended ADC inputs then subtracting the result, however this isn’t an ideal solution as the common mode noise rejection isn’t as high/responsive.

Differential ADC support is planned for a future release. There is a workaround that supports the differential ADC which you can use prior to its official release. I will send that to you via a direct message.

I would like to use the differential ADC mode of a TI C2000 device and was wondering whether differential ADC support is available in PLECS by now.

Differential ADC support was introduced in TI TSP version 2.3. Please upgrade to the latest version of the TSP to take advantage of this feature. You can download it from our website: TI C2000 Code Generation | Plexim
